Crop nutrients found to be affected by germination conditions such as pH and temperature: Study

Recent studies have revealed that soybean can be a good source of natural peptides, which can offer a number of surprising health benefits. Now, a new study shows that the accumulation of peptides in soybean can be affected directly by different factors, namely soil temperature, and pH, as indicated by a group of researchers.

It is said that during germination, high levels of peptides are known to accumulate in the tissues of legumes. You might think that legumes are just a good source of protein, but there is indeed evidence that they can offer so much more. They should be viewed as a good source of peptides as well as other beneficial nutrients.

In the study titled, “Effects of germination conditions on peptides accumulation in soybean (Glycine max L. Merr.),” the researchers looked at the effects of specific germination conditions, such as pH, soil temperature, and time itself, on protease activity and the accumulation of peptides in soybean tissue.

The researchers aimed to further optimize germination conditions for the accumulation of peptides through response surface methodology by relying on the desirable level scope of parameters.

After analyzing the data that they gathered, the researchers found that pH, temperature, and time (P<0.05) significantly influenced the peptides yield and protease activity in the observed plants. They discovered that the optimal pH, temperature, and time for protease activity were five, 25 degrees Celsius, and six days, respectively.

On the other hand, optimal pH, temperature, and time for peptides content were 5, 30 degrees Celsius, and five days, respectively. The researchers also noted that Box–Behnken design indicated the following optimal germination conditions: a pH level of 4.8, a temperature of 29 degrees Celsius, and time of five days.

Once they managed to analyze all of the data, the researchers were able to conclude that the highest peptides content could be obtained in germinated soybean through a particular method. Using principles based on their research results, they deemed the germinated soybean a valuable component of foods that are rich in peptides.

Benefits of peptides

Peptides are highly sought after for their known health benefits. They are tiny proteins and active molecules that hold many remarkable properties. There is data that shows they offer significant anti-aging benefits and so much more.

Some research studies have shown that it can lower blood pressure, which, in turn, can reduce your risk of heart disease. Peptides in egg whites, in particular, are essential, since getting them means getting all of the other nutrients available through eggs as well.

Another one of the many benefits of peptides is the fact that it can be used to combat hypertension and improve the health of one’s heart. The fact that it can found in more and more natural sources is just the icing on the cake. As a naturally occurring nutrient, it is readily available, highly cost-efficient, and best of all doesn’t cause harmful effects to the human body. For these reasons, it’s important to find a reliable and abundant source of peptides, since it can lead to the reduction of the use of synthetic alternatives.
